It combines the sweet and buttery flavors from the batter, mixed with the salty egg and fresh coconut shavings. 

Tips

You can also make this bibingka recipe using the oven. Place the batter in individual molds, arrange them in a baking sheet, then bake them initially for 10 minutes at 200C / 390F. Remove from oven, then cover the bibingka molds with banana leaf and butter. Bake for another 5 minutes.

Ingredients
  • 1 cup rice flour
  • 2½ tbsp baking powder
  • ¾ muscovado sugar
  • 3 tbsp butter
  • 1 (33g) pack Knorr Complete Recipe Mix Ginataang Gulay
  • 1 cup water
  • ¼ cup fresh milk
  • 3 pcs whole eggs
  • salted egg, sliced
  • cheese, sliced
  • butter, softened or margarine
  • niyog
  • sugar
Cooking Method
  1. Let's begin by sifting and combining rice flour and baking powder together. Set aside. Whisk sugar and butter until well mixed.

  2. Bring Knorr Complete Recipe Mix Ginataang Gulay dissolved in water to a boil then bring down to a simmer until thick. Let this cool.

  3. In a bowl, beat egg until light before adding the milk and cooled gata. Combine all dry and liquid ingredients together.

  4. Pour mixture in a greased round baking pan lined with banana leaf then cook in between coals or in an oven. When bibingka is halfway set, top it with salted eggs and cheese.

  5. Cook until inserted toothpick at the center comes out clean.

  6. Serve topped with margarine, sugar, and niyog. What can be more fun than enjoying a warm and nice serving of Bibingka with family and friends.
