Want to elevate your leftover chicken? You should give Chicken Alexander a try. Chicken Alexander is a creamy casserole dish from the UK. Don’t let its fancy name fool you because it’s super easy to prepare at home.



Our Chicken Alexander recipe uses Knorr Chicken Cube and Knorr Cream of Mushroom Soup to take the chicken’s flavor to the next level. Plus, most of the ingredients for our Chicken Alexander Sauce recipe are probably in your pantry anyway, so this is a dish you can prepare anytime.

Ingredients
  • 2 tbsp extra virgin olive oil
  • 4 tbsp melted butter, divided
  • 1 pc onion, chopped
  • 2 pcs garlic cloves
  • 1/2 pc green bell pepper, chopped
  • 1 cup carrots, chopped
  • 1 pc Knorr Chicken Cube
  • 1 pc Spanish Chorizo, chopped
  • 2 cups roast chicken, chopped
  • 1 cup cooked corn kernels
  • 1 pack Knorr Cream of Mushroom Soup
  • 2 1/2 cups water
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper

For topping:

  • 3 cups mashed potatoes
  • 1 cup breadcrumbs
Cooking Method
  1. Add the extra virgin olive oil and 2 tbsp of butter in a skillet over medium heat. After about 2 minutes, saute the onions, garlic, and green bell peppers.

  2. Add the rest of the ingredients, except for the ones for the topping. Blend the liquids well into the mixture.

  3. Preheat the oven to 350F. Place everything from the skillet in an oven-proof baking pan.

  4. Put the mashed potatoes on top of the mixture. Spread the potatoes evenly as a top layer, using a spatula, covering the chicken mixture.

  5. Sprinkle some chopped green peppers and carrots. Drizzle some melted butter all over. Top with the bread crumbs.

  6. Bake at 350 F for around 12 minutes. Serve warm.
