Ingredients

For the mango salsa

  • 2 pcs large mangoes, diced
  • 2 pcs onions, finely chopped
  • 1 pc garlic clove, minced
  • 1 pc jalapeño pepper, finely chopped
  • 1 pc lime, juiced
  • 1 pc avocado, sliced
  • 1/2 pc bell pepper, diced
  • 1/4 cup cilantro, finely chopped
  • to taste salt

For the salmon cakes

  • 1 lb wild-caught salmon
  • 3 tbsp avocado oil (or more as needed, divided)
  • to taste salt and pepper
  • 3 pcs onions, finely chopped
  • 1/2 pc red bell pepper, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 cup panko breadcrumbs
  • 2 pcs large eggs, lightly beaten
  • 3 tbsp Lady's Choice Real Mayonnaise
  • 1 tsp Worcestershire sauce
  • to serve hot rice and butter
Cooking Method
  1. Gently mix together all the mango salsa ingredients in a small bowl. Cover and place in the refrigerator until ready to serve.

  2. Preheat the oven to 450°. Place salmon, skin side down, on a rimmed baking sheet. Drizzle with 1 tbsp of avocado oil and sprinkle with salt and pepper to taste.

  3. Bake the salmon in the oven for 10-15 minutes. Remove from oven and allow to cool slightly. Flip the fillet over and scrape off the skin, then discard.

  4. Place the skinned salmon in a large bowl and crumble it with your fingers. Add the remaining ingredients except the avocado oil. Mix well with your hands.

  5. Form the ingredients into patties about 2 or 2 ½ inches across. This should form 12-14 patties. If the pattie doesn’t hold, add more mayonnaise.

  6. Preheat a large cast iron skillet over medium heat. Add 2 tbsp of avocado oil and wait for it to get hot.

  7. Fry half of the patties until deep golden on each side and cooked through, above 3-4 minutes per side.

  8. Remove to a paper towel-lined plate. Add more oil, if necessary, and fry the remaining patties.

  9. Serve immediately with mango salsa and hot rice.

It’s better to slightly underbake the salmon because it will be cooked more when you fry the patties.
