Ingredients
  • 2 pcs large banana hearts (about 4 lbs)
  • 2 tbsp rock salt
  • 1 tbsp canola oil
  • 1 pc onion, peeled and minced
  • 3 pcs garlic cloves, chopped
  • 1/2 lb pork belly, sliced
  • 1 pc Knorr Pork Cube
  • 1 tbsp fish sauce
  • 1 can coconut milk (13.5 oz)
  • 2 pcs thai chili peppers, stemmed and minced
  • to taste salt and pepper
Cooking Method
  1. Peel and discard the banana heart’s fibrous skin layers until you reach the softer, lighter core.

  2. Trim off the banana heart’s stem and discard. Cut it into half and slice thinly.

  3. Place the shredded banana heart and rock salt in a large bowl. Let it stand for 10 to 15 minutes. Using your hands, squeeze it to release the bitter sap. Rinse well with cold water and drain.

  4. Heat oil in a wide pan over medium heat. Add garlic and onions, and cook well until softened.

  5. Add pork and Knorr Pork Cube into the pan. Stir occasionally until it turns light brown.

  6. Add fish sauce and continue to cook for about a minute or two.

  7. Add the banana heart. Cook and stir occasionally for about 3 to 5 minutes or until it releases liquid.

  8. Add coconut milk and Thai chili peppers.

  9. Lower heat, cover the pan and continue to cook for 15 minutes or until the vegetable is tender, the pork is cooked and the sauce has thickened.

  10. Season with salt and pepper to taste. Serve hot.

Proper preparation of the banana heart is key to this vegetable side dish. Make sure you properly remove the fibrous outer layers and the yellow flowers before cooking.
