A Native Filipino Merienda With a Frozen Ube Surprise 

	    
              
This is nothing like the native Filipino merienda you know. Unlike ordinary saba-stuffed turon, this recipe combines bananas, desiccated coconut, and ube ice cream for a unique filling. The usual process requires frying right after rolling; this one needs some time in the freezer. The classic comes coated with melted brown sugar; this variation calls for a drizzle of caramel syrup.

Ingredients
  • 1 saba or lakatan banana, sliced
  • 2 tbsp desiccated coconut
  • 2 tbsp brown sugar
  • 6 scoops Selecta Super Thick Ube Royale Ice Cream
  • 1 tbsp icing sugar
  • 1 tbsp flour
  • 1 tbsp water
  • 12 pcs turon wrapper
  • 24 pcs ripe jackfruit, sliced thinly
  • cooking oil, for frying
  • caramel syrup (optional)
  • almond flakes (optional)
Cooking Method
  1. Combine banana, desiccated coconut, and brown sugar in a bowl.

  2. Add Selecta Super Thick Ube Royale Ice Cream and mix well. Transfer to a rectangular dish and spread evenly. Set aside in the freezer overnight.

  3. Mix icing sugar, flour, and water to make a mixture for sealing. Set aside.

  4. Once ready, take out the frozen filling and slice into 12 small rectangles.

  5. Place a turon wrapper on a flat surface. Arrange 1 frozen filling and 2 jackfruit slices on top.

  6. Wet corners with the prepared mixture. Fold sides, roll into a log, and seal edges. Repeat with remaining ingredients.

  7. Heat oil in a pan. Deep-fry turon until golden brown. Drain on paper towels.

  8. Serve turon drizzled with caramel syrup and topped with almond flake.
