Ingredients

For the beef

  • 1 tbsp cooking oil
  • 500 grams beef sirloin, cut into small pieces
  • to taste salt and pepper

For the stew

  • 1 tbsp cooking oil
  • 2 pcs green chilis, sliced and divided
  • 2 pcs red chilis, sliced and divided
  • 1 stalk lemongrass, divided
  • 1 tbsp curry powder
  • 1 packet instant kare-kare mix
  • 1 packet Knorr Beef Cube
  • 1/4 cup peanut butter
  • 1/4 cup tomato paste
  • 2 cups beef stock or water
  • 1 cup coconut milk
Cooking Method
  1. Season beef with salt and pepper. In a large pan, heat oil over high heat. Once it’s hot, sear the beef until browned on one side, about 1 ½ minutes, and set aside.

  2. Add oil to the same pan over medium heat. Add half the green and red chilies and lemongrass. Cook, stirring frequently, until they soften.

  3. Add the curry powder, instant kare-kare mix, Knorr Beef Cube, peanut butter, and tomato paste. Cook until toasted.

  4. Add the beef stock, stir, and cook until the kare-kare mix is dissolved and the peanut butter and tomato paste are well incorporated.

  5. Once boiling, reduce heat to low and bring the mixture to a simmer. Cook until thickened, which is about 10 minutes.

  6. Add cooked beef and coconut milk, saving some milk for garnish, if desired, to the sauce. Garnish with the remaining chilies and serve.
