INGREDIENTS
Chicken Morcon With Cheese Ingredients
- 4 pieces chicken breast fillets
- 1/2 Cup pineapple juice
- 1/3 Cup Calamansi Juice
- 1/3 Cup Soy Sauce
- Salt to taste
- ground black pepper to taste
- 4 slices cooked ham
- 2 pieces hotdogs cut into 4 long strips
- 8 pieces cheddar cheese cut into thick strips
- 2 pieces hard-boiled eggs cut into wedges
- 1/2 Cup all-purpose flour or as needed
- 2 medium eggs beaten
- 1 1/2 cups breadcrumbs as needed
- Oil as needed for frying
- 1 tablespoon tomato paste
- 1 Cup water
- 1 piece Knorr Beef Broth Cubes (available here)
- 1 Cup Tomato sauce
- 1/4 teaspoon ground black pepper or to taste
INSTRUCTIONS
- Pound and flatten chicken fillets. Set aside.
- Make the marinade: Mix together pineapple juice, calamansi juice, soy sauce, salt, and pepper until well combined. Add chicken, making sure everything is completely submerged. Marinate for 30 minutes. Remove chicken from marinade. Set aside marinade.
- To assemble: Place and layer ham, hot dogs, cheese, and egg slices on top of chicken and roll the chicken. Tie closed with kitchen twine. Roll the chicken roll in flour, beaten eggs, and breadcrumbs, and fry in a little oil until golden.
- To make a sauce, drain the oil from the pan. Add marinade then tomato paste, cooking in the pan until browned and almost reduced. Deglaze with water, then add Knorr Beef Broth Cube (available here), tomato sauce, and ground black pepper. Cook for a few minutes.
- Place chicken in the sauce and allow to simmer for a few minutes. Slice the chicken rolls. In a dish, pour the sauce, layer the chicken in the sauce, showing the stuffing.
