This dish combines the sweet and rich flavor of eggplant with the soft texture of the tofu cooked in the salty and tangy adobo style sauce.

- 3 pieces eggplant sliced into rings
- 1 pc Knorr pork cube
- 1 cup water
- 1 tablespoon vinegar
- 1 tablespoon soy sauce
- 3 cloves garlic chopped
- 1 pc fried tofu puffs cubed
- In a medium -sized pot, add water, garlic and crushed Knorr pork cube, bring to a boil.
- Lower the heat to medium, and let it simmer. Add the eggplant, vinegar and soy sauce. Continue to simmer uncovered until vinegar aroma is not too strong and the eggplant is nice and soft. Add the fried tofu.
